Recipe Of The Day!

I was doing my morning news-crawl when I ran across this recipe. Seeing as how the family will be at our place for the Thanksgiving feast, I squealed in delight and did a little jig. These taters will be a perfect time-saver, and they should be delicious!

MAKE-AHEAD POTATOES

You have to have mashed potatoes to go with all that luscious turkey gravy. For years, I played switcheroo with pans of side dishes just to find enough space on my stove to cook them all. Then, I discovered the following recipe for perfect mashed potatoes which can be made in advance. Now, all I do is pop these in the oven when I take out the turkey. By the time the bird rests and is carved, the potatoes are hot and fluffy.

9 medium-sized white potatoes (Idaho, russets or Yukon Golds)

6 ounces low-fat cream cheese at room temperature

1 cup low-fat or nonfat sour cream

1 1/2 teaspoons onion salt

1/4 to 1/2 teaspoon white pepper

1/2 cup melted butter

2 teaspoons room temperature butter

Paprika for garnish

Peel and boil the potatoes. Drain and place in a large bowl. Add cream cheese, sour cream, onion salt, white pepper and melted butter. Beat with a mixer until fluffy. Place in a 2-quart casserole that has been sprayed with nonstick cooking spray. Dot with remaining butter. Cover and chill until ready to use.

To serve, preheat oven to 350 degrees and bake casserole 30 minutes or until heated through. Sprinkle with paprika for garnish.

Serves 8.

    Luckily, we never host so I don't have to worry about it...

    Basically, we don't host because our family get-togethers consist of at least 16 and we have a smaller-sized oven so it would be an "issue" to cook for that large a crowd.

    One of these days I'd love to tear out the built-in, put in shelves and install a standard stove where the stove-top is...

    This is called a "barberchair" as the fir split from the bottom. They are limbing what's standing now (150') to get ready to fall it as I type.

    It was a miracle that the half that fell didn't take out a huge section of my garden.

    We were watching tv last night when the rain just started pouring down and the wind whipped up. Next thing we knew it sounded like a truck had hit our house (and it fell on the garage not the house). I'm so glad it fell on our garage, if it went the other way it could have fallen on our neighbor's house (the baby's room is right across from the tree). Thank God it didn't fall that way.

  12. Yikes! That's quite a break there. Glad nobody got hurt; hopefully the damage isn't too bad on the garage there. I can't believe trees break like that often enough that you all have a name for it =: O

    Our area had an incredible amount of tree damage in the snowstorm a couple weeks back- mostly just broken limbs ( but hundreds of them). There were some smaller trees that looked like they just got squashed by a giant boot. We had a bunch of big limbs in our tiny backyard, but no major damage. Our friends down the street weren't so lucky- a huge tree on the steep hill behind their house broke halfway up and crashed down on their roof. They had to move out because the tree is still attached at the point where it broke and they're worried it will break loose and swing down into the house like a giant pendulum.

    I'm suppose you folks in the PNW have a name for something like that.

  14. We had friends over for dinner last Saturday and I timed the mashed taters to be done by the time they arrived. Once the taters were tender Matt put them through the food mill in a big stainless steel mixing bowl and then we added melted butter and warm cream, mixed all together and covered in foil. Popped into the oven (which had been switched low because the casserole was cooked). We served dinner after appies and salad about 50 minutes later and the potatoes were perfect.

    I'm just not sure about this recipe, heating up potatoes from stone cold whether they would be fluffy or not. I think I'd rather time them to be mashed at the point the turkey comes out of the oven and then keep warm as per the above.

    But, that's just me.

  15. Wow! Florrie! That's a HUGE tree! Did it do much damage to your garage? I'm so glad no one was hurt and your garden is safe.

    We have 2 firs in our garden and the house committee is talking about cutting them down because they are extremely tall and bend like twigs in storms. I'm always waiting for one of them to come through my lounge windows.

  16. annie, just the end of the tree - about 4" diameter - hit it and did considerable damage (repair guy estimated around $5,000 +).

    We plan on getting an arborist to look at our other trees just in case. I hope you get yours taken out, annie. It's very expensive but oh well, it's only money.
